The annual event that kicks off the year for the industry, was brought online for the first time in response to the travel challenges imposed by the ongoing coronavirus pandemic. Despite the challenges, growers and supply chain members tuned in to the educational programming and virtual trade show to do business and prepare their operations for the future. &nbsp;<\/p>\n\n\n\n<p>With an eye on the future, Potato Expo 2021 addressed many pressing issues from evolving consumer trends as a response to the pandemic to an increased focus on sustainability efforts. The event featured sessions on how COVID-19 is impacting the industry\u2019s ability to get potatoes into the mouths of consumers, how changes in the political landscape is impacting the industry\u2019s policy and trade efforts, and how changes in farming technology is helping the industry innovate.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"566\" src=\"https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224-1024x566.jpg\" alt=\"\" class=\"wp-image-2175\" srcset=\"https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224-1024x566.jpg 1024w, https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224-300x166.jpg 300w, https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224-768x424.jpg 768w, https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224-1200x663.jpg 1200w, https:\/\/www.nationalpotatocouncil.org\/wp-content\/uploads\/2021\/01\/Screenshot-2021-01-05-150224.jpg 1224w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>The Let\u2019s Get Cooking Competition hosted by Chef Joel Gamoran featured home chefs from across the country competing virtually to produce the most compelling potato croquettes.
